Lunch Ladies Serve Food and Concern

The masterminds behind a great lunch experience is none other than our lovely lunch ladies! Behind the scenes in the lunchroom, Manager Mrs. Brenda Scissom and her staff of 10 other ladies work very hard to prepare tasty meals for hundreds of students each day. Beginning around 5:45 a.m. to 6 a.m. the preparation for breakfast is started. Food is distributed through two major companies; Gordon Food Service (GFS) and  (IWC) which is Tennessee’s largest independently owned food service distribution. From there, the Food Service Coordinator Carlan Cotten, and Mrs. Scissom decide what is served. If you’re wondering how many biscuits are prepared each morning, there is no exact answer. “It’s more of a guessing game. There is no telling how much food is made each week. We try not to let food go to waste.” says Scissom.

Mrs. Brenda really enjoys her job and says that the ladies with whom she works  make it fun. Each day is not like the last, and what many students don’t realize is that many of the foods are actually homemade items. For example, the chili and lasagna are some of her favorite homemade dishes to make. Getting to know students as they go through the lunch line is something that she and her staff really appreciate. So, the next time you see a lunch lady, let her know that you appreciate her too!
